I like how they managed to balance Shiori's 'empathy' with her being an insensitive yokai. When the plot twist with her blood came up, I was afraid it would follow the "oh I secretly harbor so many feelings and I'm not actually a monster" schematic. But she sees Hinako as some kind of property, something that is positive for Shiori, and acts accordingly to protect her own interests.

I really don't agree with this at all. Shiori clearly doesn't want to be a monster, or being called one by Hinako wouldn't have hurt her so much; she just believes that this is the only way she can be.

I agree with your take. It’s like how I took Shiori calling everyone at the zoo meat last episode as a defense mechanisms. That whole date she was jealous of Miko for really understanding humans. She wants to get there because of Hinako, but doesn’t know the right way

I agree that it was indeed insinuated during the recent events, my comment was about the overall impression I had (as in: her entire story so far). I have no knowledge about japanese mermaids, but in the west, there's both the concept of longing to be human and taking advantage of humans. Most likely, we're going to see some development in the next episodes.

Her act of empathy and caring for Hinako is indeed very selfish and self serving. She wants to keep her "sunshine" all to herself and only didn't eat her because she finally realized she would be gone forever. It is a very concrete thought process which makes her "monstrous" in a way. It's sort of a mirror to a human psychopath who we may also consider a monster; those who commit horrific acts out of a lack of empathy.

But even yokai have to start from somewhere I suppose.
