First grill this spring

Grilled chicken with a spaghetti alfredo. The pasta was pleasantly light, not too heavy, despite the cream and parmesan. Brined the chicken before grilling it on my kettle and it was well seasoned and delicious.

Looks amazing! What did you use for your brine? Nice char too! Did you do indirect and then go for the hash marks or direct heat? Thinking of doing a dish like this as well.

I brine chicken breasts in 2 pints of water with 2 tablespoons of salt for about 45 minutes.

My grilling set up is a Weber kettle, with an aftermarket cast iron grill. The cast iron is a circular insert and I use an upside down vortex, so the opening of the vortex is exactly the size of the cast iron grill insert. Its like a furnace right up on the grill.

I grill on direct heat, lid off, flip, then move to the side for indirect with the lid on. For the indirect, it doesn't take long, the thermometer on the kettle goes up over 500F.
