If you just wanna catch up to The Mandalorian & Grogu, there's a bit to get brushed up on. The chunk of catch up is the animated stuff that ties to all of it...
There's The Clone Wars (2008), which takes place between Episode II: Attack of the Clones, and Episode III: Revenge of the Sith. A lot of The Mandalorian's foundation starts here, introducing characters and telling stories that will continue to unfold throughout other shows. It's seven seasons, and while early episodes can be kind of a drag, they're worth getting through to experience the best the show has to offer, which pretty much comes by season 3. Then, there's The Bad Batch, which roles out of both The Clone Wars and Episode III: Revenge of the Sith. This begins building on the foundation set by The Clone Wars to build up to The Mandalorian. It's only three seasons, with sixteen episodes a piece.
If you're wanting to focus on just stuff that builds towards The Mandalorian, then you can jump to Rebels. It's four seasons, also really great, and it acts as a true spiritual sequel to The Clone Wars. This show actually happens concurrently with the events of Andor's second season. But, once finished, you'll be able to ease into The Mandalorian. Watch season 1 & 2, then The Book of Boba Fett. Then, you'll be able to watch The Mandalorian's third season without any confusion on a couple'a things, and you can finish it all off with Ahsoka: Season 1 before hopping into The Mandalorian & Grogu.
If you wanna get to better know some characters you met along the way during your Mandalorian journey, then you can check out the three animated mini-series, Tales of the Jedi, Tales of the Empire, and Tales of the Underworld. They're six episodes a piece, each one focusing on two characters' stories in-between certain events. Most of them are backstories, some are continuations of loose threads.
Then, that just leaves the animated Maul: Shadow Lord show, the Solo: A Star Wars Story movie, and the live-action Obi-Wan Kenobi mini-series. In that order...
If you want more, I do highly suggest The Acolyte, set 100 years before all of this, and it kind'a shows the erosion within the Jedi Order. There's also Skeleton Crew, which happens around the events of The Mandalorian stuff. It's tons of fun! Star Wars: Resistance is 100% the only thing I do not recommend. It's not worth the time. It takes place during The Sequel Trilogy and adds absolutely nothing.
Anyway, here's a Clone Wars chronological watch order (It started off as an anthology due to budget restrictions, but became more serialized by season 3. Some of the episodes separated by whole seasons actually make up pieces of larger arcs)...
The Clone Wars - Season 2, episode 16
The Clone Wars - Season 1, episode 16
STAR WARS: THE CLONE WARS
The Clone Wars - Season 3, episodes 1 & 3
The Clone Wars - Season 1, episodes 1-15, 17-21
The Clone Wars - Season 2, episodes 1-3, 17-19, 4-14, 20-22
The Clone Wars - Season 3, episodes 5-7, 2, 4, 8
The Clone Wars - Season 1, episode 22
The Clone Wars - Season 3, episode 9-11
The Clone Wars - Season 2, episode 15
The Clone Wars - Season 3, episodes 12-22
The Clone Wars - Seasons 4-6
The Clone Wars - Season 7, episodes 1-9

The previous comment gave you an excellent guide to become a super fan, but I do think watching all that could be exhausting if all you want is to enjoy The Mandalorian and the new movie. In fact, every new show is made with the intention to attract new audiences, and so is the movie, so you really don't need any homework to enjoy it for what it is, though you'd obviously be paying attention to a lot more details if you have the context of all the other shows.
Is it necessary to watch The Mandalorian show to understand the movie? No, it does a good job of telling you what you need to know, still I'd highly recommend you watch the three seasons of The Mandalorian and the one season of The Book of Boba Fett if you want to know the whole story of the relationship between Mando and Grogu, you don't need anything else for that purpose alone. Order: S1, S2, The Book of Boba Fett, S3, movie The Mandalorian and Grogu.
