Er det (mer) riktig å si "I dag er ikke bursdagen min" eller "I dag er bursdagen min ikke" for "Today is not my birthday."?

The first, but I'd rather rephrase. "Det er ikke bursdagen min i dag". "Jeg har ikke bursdag i dag".

"I do not have birthday today" is a new way of thinking for me!

If I wanted to say other events such as marriage anniversary etc, do I just swap the nouns while keeping the sentence structure same?

Yes!

"Vi har ikke bryllupsdag i dag" or "Det er ikke bryllupsdagen vår i dag"
