I like them very simply cooked to reduce and concentrate the flavours with a little salt. You can add oil or butter to add some more calories and richness, some mushroom sauces would use cream as well.
The trick is to cook the mushrooms with no oil at first. Counter intuitively you actually add a little dash of water to start the cooking process and get the shrooms to release their water. Once they start to shrink you can add the salt and oil/butter to brown them up.
