Use a smart plug and temp/humidity sensor. I have a "dumb" dehumidifier that doesn't have a built-in humidity meter. I use a Shelly Plus Plug and a Shelly H&T sensor. The Shelly app can be used to turn the Plus Plug on or off when the H&T humidity reading hits a certain level.

I run a Danby dehumidifier in the garage. It has a smart dehumidifying feature which will only run at a set threshold. I just keep it turned on.
