Never seen chicken skin like this ...

Foster Farms whole chicken

I salted this bird then placed it in the fridge overnight

The skin is peeling and shedding, it looks weird

In these photos it looks like freezer burn but in person it looks so strange and doesn't look like freezer burn.

Is this a diseased bird? I'm wondering if I should bring it back or just toss it

This is differences in moisture caused by salting and air drying. It looks like this because you salted it and air dried it in the fridge. You didn’t do a particularly even job so it’s blotchy and uneven. Areas that don’t get air flow like where skin touches skin also have more moisture.

There is nothing wrong with this chicken and it looks like this because of what you did to it.

The salting was even, I've just never seen skin shed like this.
