Sausage package says eat within 3 days of opening—is it a big deal if I go past this?

Bilinskis chicken sausage are very natural for sausage and the package says this, yet there are five sausages in the package and I obviously can’t finish that in 3 days. Is it okay if I still eat the other two through out the week or am I risking illness?

You should freeze them if you won't eat them in the safe timeframe.
