General Question Unfrozen turkey appearance/texture

Bought a 14lb bird back around December and it’s been in its original sealed plastic in the freezer since then.

Thawed it in the fridge for three days and today handled it to dry brine… Skin is a little lax but otherwise seemed normal until I noticed some kind of slightly crunchy webbing and little fat(?) blobs when separating the skin.

Ice crystal structure? Is this normal from freezing or is there something else going on? Ive handled a lot of turkeys but haven’t encountered this before.

Yes that’s normal connective tissue.
