My first fermentation project!

Everything is going really great so far! I can't wait to introduce all of these bugs to my gut! I pulled aside a jar of fresh and a jar at 12 hours so I can introduce it into my system slowly just in case an acclimation period will be needed. Plus it tasted so good, I wanted to add it to everything right away! I have a tester jar also so I can keep an eye on the flavors and quality over the phases/days of fermentation.

I'm curious how often you replace the labels? Every 12 hours?

I pre-made the labels and attached them all, and I just pull the jar for that fermentation time each day and move it to the fridge. End of day 2, pull day 2 jar and move it to the fridge. So the jars in the fridge show the fermentation time forever, and I can pull from the jar I want for each meal based on whether I want a more mellow or more sour flavored kimchi in the dish. Make sense?

I see, that makes way more sense. I thought you were keeping track of ongoing fermentation with new labels
