Sunday evening jambalaya for the week!
Sixth or so jambalaya I’ve made (after making a gumbo for a party yesterday)! I’ve really enjoyed seeing execution of this improve after picking up some tips from others here.
With this jambalaya, I was shooting for a better color. Tried to brown the meats a lot harder than usual and I let the trinity (specifically the onions) cook down a lot more to try and caramelize and give up some of that darker color. Still trying to put off using browning sauce but I think this is about as dark as I can reasonably get in the Dutch oven indoors..

Brown the sausage in the pot first to create a fond. It will look like you burnt the bottom of your pot. Then put the sausage aside and cook the trinity, which will pull up the fond giving you flavor and color.
