Private Sale Process for getting a gifted car from parents right before moving to another state?

My parents and I are currently living in two different states in the Midwest. I am borrowing their car currently as a student but am about to move to the West coast in a few weeks for a job. They are going to gift the car to me soon to make moving there with my stuff easier.

Is the proper way to do this so that I can drive the car across the country that my parents transfer the title to me with a bill of sale stating it was a gift, I obtain insurance in my destination West coast state, drive over, then register the car in my name?

I know this is convoluted and it would be simpler to ship my stuff over to the West coast rather than drive but I have personal belongings that can't be shipped so moving there first and buying a car there isn't an option.
