I would avoid 2. Seems to have less. Number 3 only comes with 10 cables, which is quite few for larger projects. Might be worth investing into cables (AliExpress has many for cheap). Personally, I'd get 1. Seems to have some more components.
If you don't mind me asking, what are the prices? Half may not mean much if it is $10 and $5. You might be able to get the same stuff on AliExpress for cheaper too (look at "choice", free shipping on orders above a threshold price)

If you can, check the instructions. The instructions are, IMHO, the most important part in the kit. If they are unclear or you think you might have difficulty following them, then you might be buying a headache.

I would reccomend none of those, since they do not include any type of screen, but if you have to get specifically 1 of these for some reason, I would reccomend the first kit since it is the most diverse of the 3.

Yeah I would look at something that has quality instructions - here is one of my favorite kits to teach electronics with to beginners - https://htm-workshop.com/shop/gamepad/
It is has a lot of the normal kit stuff but you get to build circuits that are more practical and learn programming if you want. It can be used by beginners but also has a lot of depth.

I like the first one. Once you settle on a project most likely no beginner kit will have all the parts so you'll have to order new ones anyway
