I'm late, but this is the top level comment I could generically latch onto:

One of the students said they had a birthday in February, and another said March 20th, while Shiori said March 31st. How the fuck is she the earliest???

Might be a translation issue but they were looking to sacrifice the youngest since the ghost story was showing them sacrifice newborns. Shiori having the latest birthday makes her the youngest.
