So, how many chapters of the second book did this episode adapt, and what got cut?

It covers the first six chapters of Anne of Avonlea (which has 30 chapters). Surprisingly, there really isn't much stuff cut out entirely this episode. The biggest change is that the anime really compressed everything with Mr. Harrison. In the book his introduction, the cow incident, and Anne befriending him takes up most of the first three chapters; the anime has all of that happen offscreen and told to the audience (rather than shown) instead.

The first six chapters, with the first entire three chapters entirely cut. Though there's not really much of chapters four and five left besides their basic concept. So in a sense we only got a parred down version of six in any real resemblance, and everything else is just constructing some very basic cliffnotes to communicate the information of five absent chapters. Gone is almost everything about Mr. Harrison, a lot of conversation with Marilla or Rachel setting things up that are reduced to quick expository lines here, an extensive conversation about corporal punishment, an encounter with an unreasonable parent, and most of Anne's impression of her students and first day as a teacher.

I have to assume most of Mr. Harrison's role is gone if this is how they handled his introduction. Given he's one of the major characters of the book, I kind of have to imagine they're going to be especially aggressive with cutting down Anne of Avonlea since it's the most filler-ey of the first three.
