My take on Greek salad
Chop up some red pepper, cucumber, red onion, zucchini. Usually there are tomatoes and olives but I don't like those. Put all the chopped vegetables in a bowl. Put on some dressing (I like kraft oil n vinegar so something like that is yummy). Crumble on feta. Add some pepper if you like. Boom. Done.
Make lots at once so you have a quick, tasty meal option for a few days. Protein, fats, fibre, vitamins & minerals all in one scoop.
Chopping up veggies seems annoying when you are depressed but it uses one knife and a cutting board that are basically just dirty with water (or not even a cutting board if you don't give a shit about counters). Dishes are the worst when you're depressed. I don't even peel the zucchini or cucumber because the skins are good for you and then it's way less mess. It takes probably 3 or 4 minutes to make something you can enjoy for days and help get most of the nutrients you need even when you barely have the energy to shower. And it tastes so good and refreshing!
