Employee question Tempering & Prep (Uk/IRE)

Can anyone explain this to meπŸ™ the whole system confuses me

Prep is basically having enough of everything ready when you need it. There are tempering & defrosting charts for everything telling you exactly what to have ready on certain days and certain hours.

Tempering basically means making sure everything is at the right temperature for use.

E.g. you shouldnt use bacon/pancakes from frozen - it needs to defrost in the chiller first, cheese/dressings should warm up (temper) outside the chiller before you use them.

If you have a SATO label printer it can print stickers for all these to track when they are ready or need to be thrown away, there should also be a dressings chart that lists which stickers to use and where.
