Why did Microsoft create like 50 million different versions of windows. I did not know this existed

Because they all had different pricing and distribution channels (and, theoretically, different feature sets).
This one, for example, was only sold to OEMs who made media center PCs (you couldn't buy it in a store / online, or even with a non-media center PC or laptop). To facilitate this, it had features added to it, like remote control (as in actual TV remote, not remote desktop) support, the 10ft UI Windows Media Center, and a bunch of other media related stuff. It also required its own special versions of graphics drivers.
Then the concept of those media center PCs kinda failed because they were too low bang for buck, and the functionality then got rolled into Xbox 360 and the normal editions of Vista.

neither did i until yesterday where a watched a video on a bunch of forgotten windows os's and this was one of them

Windows XP was the best. Nothing will ever compare. Visually stunning, simple and intuitive to use.
