Yep, cardinal rule of glueing tables broken. The direction of the cut should be alternating. I.e. the middle board is wrong side up.
Also, it's always safer to make the furniture in the air humidity percentage where the piece of furniture will stand. Best is indeed to cut the seam, and whilst you are at it, you might as well glue two thin dark contrasting wood in between the two new seems.
