TL;DR, my intake of fruits and vegetables is limited, what should I be taking/adding to smoothies to ensure I can hit all the essentials
Hello everyone, as a break down of the title, I really struggle with vegetables, not because I don't like them, but for the following reason:
- I have difficulty cooking and planning them
- Storage is problematic
- I find they are fairly expensive, and can never use them before they go off.
- When I do cook them, the amount of mess I create is enormous
- Either they are massacred or raw and the cooking of them never goes to plan (I cannot stand salad)
That said, I do have frozen spinach and peas for example, which I mix into pastas, curries, etc., as well as making soups (Thai Sqash, leek and potato, etc.), which is where I am mostly eating vegetables.
I have similar issues with fruits.
I have a smoothie most days as either breakfast or a mid-morning snack, Usually it is 2 cups Greek yoghurt, a banana, a cup frozen berries, honey, flax seeds and sunflower seeds, and often other fruits depending on what I have at home (pineapple, passion fruit, pomegranate etc.).
Ordinarily, my breakfast and lunch will be sandwiches, and I always have the multiseed wholegrain bread, never white bread.
I do feel as though I am not having a very balanced diet, and I was looking for recommendations for things to add to smoothies and other snacks to get enough fibre, nutrients and the rest, that would ordinarily come from vegetables.
Any input and advice is greatly appreciated.
