Easy high fiber and protein meals

Anyone have any good recipes for meals to sneak in extra fiber and protein? I currently add chia or hemp seeds to yogurt or a shake. I should note that I’m not a fan of the taste or texture of cottage cheese so I’ll only use that if I can blend it into something that will mask that it’s in there.

Any tips would be appreciated 😊

Finally making my own premade yogurt cups and saving over a dollar/serving

As someone who loves flavored Greek yogurt cups from Chobani, Oikos, etc, and is working on paying down a lot of debt by changing food spending habits, mixing my own ingredients for yogurt cups at home and jarring up a few at a time has been a boon.

My go to has been:

- 120g Plain NF Greek yogurt from Aldi/Costco from a 32/48oz container

- 12g Kirkland Honey

- 40g Frozen raspberries from Aldi/Costco mixed in with a handheld blender

-a teaspoon of chia seeds

I'll jar up three at a time or so and just keep them on hand at all times and averaged out servings cost about 60 cents a piece. I tried going without the honey initially but needed some more sweetness to even out the tartness.

In LotR, Lembas Bread is so nutritionally dense that "one small bite is enough to fill the stomach of a grown man", and it "keeps sweet for many many days, if they are unbroken and left in their leaf-wrappings".

I am looking for a similar recipe, something that will not spoil for a long time at room temperature, and is dense in nutrition and calories. I want to pack this on hiking and camping trips instead of buying expensive dehydrated foods or doing a lot of cooking (rice&legumes etc). Ideally it would be a baked product to cut down on water weight (better than canned proteins, for example).

So far, I have found the following recipes, but each have their own drawbacks:

  • ANZAC Biscuit: not as calorie dense as the others

  • Pemmican: expensive

  • Hudson's Bay Bread / British Flapjacks: very high in refined sugar

  • Bannock: not as high in protein

  • Tararua Biscuits: can't find reliable nutritional information

Further, some of these recipes include "exotic" ingredients like "golden syrup" or molasses. I live in a major western canadian city, and I'd prefer to use ingredients that I can easily pick up at a normal grocery store. I also would prefer ingredients that are cheap where I live. Of course I am capable of doing my own trial-and-error of the recipes I've found so far, but I thought I'd stop by here and see if anyone has any insights before I go fumbling around in the dark on my own. Any and all help is greatly appreciated!

Ask ECAH Work from home lunch ideas?

I work from home and sometimes have 30 minutes to both make and eat my lunches, so as much as I want to cook, I struggle finding things that are quick to put together. I don’t have any problem eating the same lunch for a week or so but rather than meal prepping, I’d prefer to ingredient prep as I don’t really like the taste of leftovers and we don’t often have dinner leftovers either.

In the past I’ve done bean and cheese quesadillas, bean nachos, ramen with eggs/veggies, tuna salads, and the ever-reliable handfuls of ingredients out of the fridge.

Does anyone have go-to work from home meals?

Ask ECAH How to make brown rice taste better?

So I've grown up eating a lot of white rice. Last year, my doctor had mentioned high levels of cholestorol, and I do have that issue in my family unfortunately.

She recommended me get onto the Mediterranean diet. I did it for a month or two and then fell off.

My biggest issue is that, a lot of meals I like, I eat with white rice. I also make white rice in bulk for meal prep, and it's also pretty cost effective. I've used brown rice before with one of my regular meal prep meals, but I could not stand the taste. To me, white rice doesn't really have much flavor. But then with brown rice, I feel like it has a slight flavor of "bad" lol. I'm trying to find a combination of seasonings that will dull that yuckiness a little bit.

What should I add to make it better? When I make white rice, the only thing I add, if anything, is sometimes some bay leafs.

Ask ECAH Easy recipes when depressed w/executive dysfunction?

I know the easy recipe question has been asked before, and I have looked up and tried some of the recipes I've found on here. My problem is making food when just not mentally able to. Cooking feels like a hurdle that's hard to jump over, and I hate to rely just on frozen or ready made meals. I just need super easy and super simple meal ideas. I've tried snack plates and thats worked before, but I get tired of them quickly. Same with the basic sandwiches. Spaghetti has been made way too many times that I just can't enjoy it anymore. Any ideas or recipes are welcome. I feel like once I get into a routine with cooking it'll become easier and feel less like a hurdle, but in the meantime I need simple things.

recipe One-pot Turkey Chilli Skillet

First time posting about a recipe but since this one came out of my own brain, I wanted to share it somewhere!

The beauty of this recipe is, you really don't need to measure anything. Proportions of ingredients are not important - just dump the ingredients in and it's done in less than 15 minutes!

Ingredients:

-Low fat ground turkey

-Frozen corn

-Canned great northern beans (rinsed in a strainer)

-Packaged chilli mix

Instructions:

-Brown the turkey in a skillet

-Dump in the beans, a good amount of corn, and a pack of chilli mix then stir.

That's it! I throw on some sour cream and tortilla strips (but the amount I personally put on makes it a bit unhealthy, so moderation is needed)

My wife does not handle spice well, but if it's just me I'll add in some chipoltes in adobo sauce too.

My hack for freezing scrambled eggs

I was reading up on different ways to freeze scrambled eggs so they wouldn't be gummy or grainy. There were a lot of suggestions to use milk but I didn't have any.

So I tried grated parmesan cheese and I am very happy with the result! I don't notice any change in texture when I microwave it from frozen.

I use the parmesan in place of salt, so no need to add extra salt (imo). I use the grated parmesan from a major brand in the US grocery stores. I'm sure there's more than just cheese in there but I'm happy with the texture.

Edited to add context:

I’m freezing scrambled eggs for meal prep and use them in ready-to-go protein breakfast bowls.

I take a small glass bowl with a lid like Pyrex or Anchor Hocking, add scrambled eggs, add crumbled bacon that I baked in the oven, add shredded cheese, and some salsa. Then put on the lid and freeze.

I take the frozen bowl, remove the lid, cover with paper towel, microwave for 60 seconds. Stir, then microwave for another 30 seconds. Stir again and if not hot enough, microwave 15 seconds at a time. Don’t microwave for too long or it will mess with the texture.

Ask ECAH My partner on average eats 2-5 ramen a day what are some healthier alternatives?

My partner LOVES ramen and can eat unbelievable amounts of food (I’m talking a whole rotisserie chicken for lunch plus a ramen, some sides like an apple, some granola bars and STILL be hungry later). A typical lunch is maybe an apple or a handful of staple items and 2-3 ramens plus he will often eat a ramen after work, sometimes 2. At this point I fear he will become a salt lick with the sheer amount of sodium he intakes every day. So, we are trying to meal-prep some more nutritious and significantly less salty meals ahead of time so that he has something quick and easy to take to work or snack on after work that isn’t ramen. Is there any way to affordably feed my bottomless pit of a man?

EDIT: I appreciate all of the advice and recipes, we will be trying many of them in the upcoming weeks! To clarify, he is an extremely active 23-year old beanpole of a person. He works a very physical job and he is a competitive swimmer so we live a pretty physically active lifestyle lol. I’m not too concerned by how much he eats, just how TERRIBLE packaged ramen is for him and am hoping to seek out more food options that he can easily bring to work with him and am happy to help out with that as we both cook other meals for each-other! Also, he is considering doing a blood test for science now because of you all lol.

Looking for strategies to save on groceries by only grocery shopping 2x per month

I am a single person household and currently spend between $50-70 per week on groceries. I need to slash it even further in light of some unexpected events in my life. Can you guys help me come up with some tips, and maybe a mock grocery list to help me get through two weeks at a time?

I'm thinking around $75 per trip, which includes buying some things in larger packaging, cooking and freezing portions. (I have a weird issue with freezing raw meats, so I have to prepare everything when I buy it. So everything I cook in bulk has to be a freezer friendly.)

I can't do red meat, but otherwise I enjoy most other meats and plant proteins. I try to keep my protein high, around 75-100g per day, and carbs low. And cheese/dairy is welcome in my diet, but sparingly.

Ask ECAH recipes that contain high iron, zinc, and selenium?

my girlfriend is undergoing a specific medial procedure in a little bit from now, and after some research, we found out that consuming high iron, zinc, and selenium help greatly with the feeling after. we also are thinking of supplements to go ontop of that, but we don't want to overdo it.

any advice on the recommended amount for her would be greatly appreciated. she is, in her words, already low on these things. i really don't want to cause her any more pain or discomfort after the procedure.

she is 18, 5'3, 98 lbs, and pollo-pescatarian (with eggs).

Ask ECAH Dinners with cabbage?

I’m making some “filthy cabbage”, which is 2 lbs of ground turkey, 3 bell peppers of different colors diced, one white onion diced, minced garlic, 1 and 3/4 of chicken broth, 1 can of el pato, 2 tablespoons tomato paste, and an entire head of cabbage chopped up. Pretty much just throw everything together into one pan. I’m serving it with some cornbread.

My husband loves cabbage soup so I only know how to make use of cabbage by making soup or this. I know there’s cabbage rolls but thats too time intensive for me .But what else can I make with cabbage? It’s so cheap and healthy but I can’t think of what else to do with it.

Ask ECAH Deliver Driver Lunch Help

Hey y'all!

Im a delivery driver and eat in the go in addition to walking 10+ miles a day.

3 things I humbly request in your suggestions:

Cannot be microwavable, must be eaten cold or room-temp

Must have meat

Must be hearty (ish). Looking for meals, not snacks

I walk 10+ miles a day and my diet consists of gas station food, which I want to change. I love everything, I only requested hearty and meaty lunches because other recommendations I've seen are yogurts, salads, or are otherwise very quick and light. Your guy needs sustenance

I discovered gnocchi recently. I started making gnocchi with veggies and feta cheese. My veggies are roasted cherry tomatoes, sautéed mushrooms, and cooked spinach. Wow, this is delicious and usually makes more than one serving with the standard gnocchi pack you get in the store. If you want to ball out, add Italian sausage for extra protein and flavor.

I struggle with vegetables, but still want to ensure I get everything I need

TL;DR, my intake of fruits and vegetables is limited, what should I be taking/adding to smoothies to ensure I can hit all the essentials

Hello everyone, as a break down of the title, I really struggle with vegetables, not because I don't like them, but for the following reason:

  • I have difficulty cooking and planning them
  • Storage is problematic
  • I find they are fairly expensive, and can never use them before they go off.
  • When I do cook them, the amount of mess I create is enormous
  • Either they are massacred or raw and the cooking of them never goes to plan (I cannot stand salad)

That said, I do have frozen spinach and peas for example, which I mix into pastas, curries, etc., as well as making soups (Thai Sqash, leek and potato, etc.), which is where I am mostly eating vegetables.

I have similar issues with fruits.

I have a smoothie most days as either breakfast or a mid-morning snack, Usually it is 2 cups Greek yoghurt, a banana, a cup frozen berries, honey, flax seeds and sunflower seeds, and often other fruits depending on what I have at home (pineapple, passion fruit, pomegranate etc.).

Ordinarily, my breakfast and lunch will be sandwiches, and I always have the multiseed wholegrain bread, never white bread.

I do feel as though I am not having a very balanced diet, and I was looking for recommendations for things to add to smoothies and other snacks to get enough fibre, nutrients and the rest, that would ordinarily come from vegetables.

Any input and advice is greatly appreciated.
